Welcome to Weeknight Pasta from Italy! If this is your first time, it’s me, Lolly from Como, Italy - the place I’ve called home for the last 14 years. I’m happy you’re here and hope you join us - we’re a community of nice people, cooking flavorful Italian meals in 30 minutes or less with ease, yum, and seasonal ingredients.
A little about me and how my cooking has changed and improved since living in Italy. I’m not exaggerating or being dramatic, Italy saved my cooking.
When I first moved to Italy in 2010, pregnant and newly married, I was a horrible cook fresh from a daily diet of New York City take-out. Additionally, I was insecure and unsure in my cooking. You’ve heard of cooking with love / amore, the secret ingredient that makes everything delicious? Try cooking with anxiety. (ha ha ahhhh!) I made some legendarily inedible meals right under the noses and tongues of my new Italian husband and mother-in-law.
Then everything changed. I learned how to cook like an Italian and now my best meals are made at home with…

Most recipes are plant-based and low waste, in the Italian food culture of poverty cooking aka cucina povera. In other words, cooking like an Italian will also save you money.
Italian home cooking is not filled with heavy-laden butter and cream so sterotypical of Italian-American cuisine, but mostly build on healthy, flavorful extra virgin olive oil.
