Your recipe sounds and looks delicious! I lived in Florence during college to study art, writing and design. I just subscribed to Weekend Pasta from Italy, and am enjoying why I loved the region- the food is fresh, flavorful, fun and nurturing!

Lolly, I love reading everything you write because you invite us to understand what living in Italy means. I have only visited parts of Italy, but love its culture and the people. I am not writing to criticize you, merely to offer a plea. When I saw this: "Make your pasta salad great again", it made me stop reading. You have escaped from the hell hole that the United States has become because of a convicted felon who was elected by a minority. You must have read about masked men abducting people off the streets, throwing them into prison and deporting them within hours. Every sane institution has been affected. And this is having global impact. Making anything "great again" sends chills down my spine because we are living in fear everyday, and I am a white woman who this regime says is superior.

I can see now how if you don’t know my politics it could be misunderstood or could just sen as my taking the situation too lightly. Thank you for respecting me enough to reach out to me directly. Lolly, Thank you for your quick response, and I know you are sincere. I really was not suggesting that you have sympathy for the MAGA movement! I think I'm reacting (today) to the bombing attack of last night and the implications for what lies ahead. But I want you to know that your recipes are a ray of light that I look forward to seeing in my inbox.

First of all, welcome back and congratulations for launching the cookaloongs! How exciting 😀

Simple everyday pasta is the BEST. Couldn't imagine my life without it.

...and those sweet, meltingly soft zucchini and onion... wow 👌 the nice thing is, you can make them in bulk and then add in a frittata or a panino, the possibilities are endless.
