Your recipe sounds and looks delicious! I lived in Florence during college to study art, writing and design. I just subscribed to Weekend Pasta from Italy, and am enjoying why I loved the region- the food is fresh, flavorful, fun and nurturing!

I loved reading this! Brought back so many memories of summers at the Venetian Lido, and you're so right about cold pasta salads not being a thing in italy!

First of all, welcome back and congratulations for launching the cookaloongs! How exciting 😀

Simple everyday pasta is the BEST. Couldn't imagine my life without it.

...and those sweet, meltingly soft zucchini and onion... wow 👌 the nice thing is, you can make them in bulk and then add in a frittata or a panino, the possibilities are endless.

Sinu, you are a genius! That’s exactly right! They can be used in a myriad of ways. Last time I topped them on salads and bruschetta with goat cheese and lots of pepper! Thank you for your enthusiasm about the pasta cookalongs! 🥰
