I’m also a big fan of Max Mariola. No matter what he’s making his videos always make me smile.

Also, pecorino sardo makes sense to bring along since it’s hard to find in the States, but parmigiano-reggiano…?

…we arrived at 7:30pm last night…but the food-filled suitcase didn’t…yet! Light some candles for us! 😉

Hi Frank! Happy we are Max fans together! Let me know what you think… I looked at the pricing of parmigiano reg online and saw $20+ for a small piece. I was already at the deli counter in Como with an aged 30-month parm in my hand for €9, so figured, bring it too.

Carbonara, yum! My favourite pasta sauces are: salsa munizzata (that's Sicilian for minced, not pureed, fresh tomato with garlic and basil, cooked for a short time), you can also poach an egg in the sauce. And I can't forget Pesto Trapanese, the Sicilian pesto. I'm not a fan of pesto Genoese!

I forgot to say, I filled a carry on suitcase with Rummo pasta when I came back from Italy.

Jo! Thank you for telling me!! I also have Rummo in that suitcase! I wish I had packed much more of it. I know some of its wheat is from Australia but it is such good pasta 🍝

Max Mariola, guanciale and cime di rapa in one post can only be perfection. I believe you and I could talk sauce (insert thick New York accent on last two words).
