Thanks, Bernadette! And so light and fresh. I’m in the US visiting my mom right now and the supermarket pasta salads look like they are buried in a mayonaise snow bank

Your turn of phrase gives me chills...but, it's true, your recipes can make pasta salad fell modern again

I know - sorry about that. I was frustrated and angry with the obscene cruelty being leveraged in the name of that phrase and wanted to take it back, make it safe, applying it to the innocuous pasta salad. I’m in Indiana visiting my mom. I feel that the sad, floppy, overdressed pasta salads locked behind glass in the deli section are not for consumption.

I just love this so much Lolly! From your cold pasta recipe to your pics of relaxing whisky and toasting with your love! Reading it brought a smile and a sigh! Cheers, my friend!🥂

Haha! Thank you, Jenn!! 🥰 I’m so happy it brought you a smile and you shared that with me - it makes my day!!! it’s not a whisky though - it’s chinotto, a bitter citrus Italian soft drink

Hold the pasta, and I'll take the tomato part! I don't eat much pasta anyway. My summer menus are tomato-based! Looks fabulous!

Unfortunately, I am not a fan of tomatoes (this makes my life extremely difficult and oh, how I wish things were different.) BUT - I do love apéro/apertivo/cocktail hour and an excellent playlist, so I will be putting this to use immediately.

(And your pictures are magical.)

My dear tomato-phobic friend, I think this pasta would be INSANE without tomatoes. I’d maybe increase the 🫒 a bit, or add in a second flavor/color olive, or capers? Thank you about the pics - honestly I feel like Liguria is very photogenic. Every time I go I take as many photos as the first time!!! Lmk what you think of the playlist 🥰🥰🥰

Well it’s midwinter in the tropics Lolly. 20 degrees Celsius in my kitchen at 9pm. It’s my happy time in the tropics.

Interesting. I will have to try this recipe. I have eaten pasta salad before and it's always terrible, but I want it to be good...

I agree. I tuoi all find it inedible but Italians won’t let that happen with their pasta. Plus - no mayo!!!

Jo Candiano's avatar

Yes no mayo! Same with potato salad, oil, vinegar, dry oregano, S&P, maybe some capers. Basta.

Yum. Looks delicious. Also been making something similar for years trying to get away from mayo-heavy American pasta salads.

I’m with you, Julie!! I cannot do the mayo-laden pasta salads. When I told my mom about this recipe, she said she thought the new ketchup-mayo being sold in supermarkets would be delicious. I can never unhear that!!! 🤪
