So glad you posted this. I’m currently listening to Stanley Tucci’s latest book and he talks about this being an Italian staple. I’m looking forward to trying it!

I brought back good Italian tuna from our most recent trip to Lucca. This simple pasta will become a weeknight staple at our table along with another favorite - aglio olio. Thank you for sharing. Buon anno and happy cooking and healthy eating in 2025! 🇮🇹💕

Oh my! That’s a tough one. I’d have to say homemade egg pasta with a simple tomato sauce using good canned DOP San Marzano tomatoes. My husband loves arrabbiata, so we sometimes add dried peperoncini. Aglio olio is right up there too. I always bring back vacuum sealed pieces of good Parmesan and pecorino too, that I purchase at a weekly market, so those elevate any pasta or soup to the next level.

In Southern California, we’re expecting high winds, with temps in the 50s and 60s by the beach, higher inland, not a drop of rain and a very high fire danger. Meanwhile, Northern California is getting drenched. Meteorologists call this weather pattern La Niña. It’s definitely not my favorite.

Glad to hear you’re healed from your bum strain! 🤭 I have been battling tight hips this year, and have *just this week* started incorporating morning stretches, which are honestly miraculous. Only a few days in and I’m feeling so much better!

Thank you for laughing, Erin! It was absurd and I felt like I was approximately 150 years old!! You are super brava for doing your morning stretching. The joke is that I'm a certified yoga teacher. I could not believe it happened, but I think the stress and sickness in Dec just broke me. I made free youtube videos for my students during Covid. Sheesh I haven't made this in ages. In 2025 I have two intentions: freedom and calm. I've embarked on a 30-ish day cooking challenge, which I asked chatgpt to create for me. The brief was to create a list of simple but challenging Mediterranean and Asian dishes. So far I gave made pita bread with salad and dips, yesterday I made a greens and herb pie with homemade Philo pastry and tzatziki, and today I will be making okonomiaki. I know a lot of people hate AI but when it's used like this, it's actually quite fun. Happy new year to everyone!

I think you used AI in an ingenious way! Like an assistant. Were there any recipes on the list that you aaked AI to revise or swap out? Can it take you to links for recipes? I love your intentions: freddom and calm. I had many years where I begged for freedom, calm, and flat out boredom. yes, boredom! I wanted my top issues to be banal things like tepid coffee instead of the intensity that they were.

So far no swap outs, but I'm making the dishes my own. Tonight's okonomiaki was topped with a cherry tomato jam and an onion jam that I brought back from Sicily. Yes there are links too but it's best to ask for them in the initial brief. Boredom is my nemesis, but calm is everything, isn't it!

SO kid friendly! My son adores this pasta. Just make sure the onions are cooked and floppy before you add the tuna. I shortcutted this once and heard about it all night! 😂
