There is no question the pestle and mortar are King and Queen! It takes longer, and is a bit of a workout, but the results are always better when you can spend the time.
Ooooh I agree 100%, Erin! 😍 Sometimes I’m just too tired for it though. 😆 My ex’s family used to shame me when I made mixer pesto, til one day I realized, any fresh pesto is darn good FRESH pesto! It’s all kilometers better than from a jar on a shelf!
I’m eager to give this a try—though in smaller quantities, either in a mixer or with a mortar and pestle as I don’t have a mezzaluna.
Thanks for the reading recommendations. I read Ruth Reichl’s memoir (her first, I believe), Tender at the Bone, long ago, and am planning to read her latest book, Paris Novel, but her Gourmet memoir is also on the list.
Oh please let me know what you think of those. I was really torn between getting the Paris book and the Plums!! The mixer works great. Fresh pesto is fresh pesto however you make it and will bring you joy 😍
Thank you for sharing 😊 Heading to the market immediately!
Yippeee, Pamela!! Let me know how it goes! The beauty of pesto is you cannot mess it up if you have good quality ingredients! 😍💚
Ooo, I'm making a non-basil pesto this week in a food processor, would never have thought to have the equipment cold! Thanks for the tip!
I was shocked at the difference it made! Don’t forget to use the cold evoo too! Soooo green and fresh. Can’t wait to hear!! X
Pesto a snap to make and endless variations and varieties
Yes, George! You’re so right! Sooooo many more varieties to try! What’s your favorite kind? 💛
Basil, mint, parsley, garlic, pecorino Romano and olive oil
Mmmm! I have all those ingredients! I might just try it! 💚
